Walnut Maple Brown Sugar Muffins

You may ask yourself why are they called brown sugar muffins. Well these muffins get a majority of their sweetness and unique flavor from dark brown sugar. Molasses is an amazing addition to any treat, but here it is the heart of this muffin. It provides rich, carmel-y flavor without being overly sweet.
My favorite thing about these muffins is they are a simple as pie. If you ever made any kind of baked good or even a pancake then I guarantee you have the ingredients to make these.
Q: Can you substitute walnuts for a different kind of nut?
A: Of course. Pecans or almond would be a great alternative!
Q: Can these be frozen?
A: Yes! I like making them and pulling one out whenever I have craving for something sweet and nutty. You can nuke them in microwave 30-45 seconds and they are good to go.
Q: Can you substitute buttermilk for non-dairy milk?
A: You can definitely substitute with a non-dairy buttermilk. I just recommend using some form of buttermilk as the acid will react with the baking soda. This is what will allow the muffins to have a good rise.

Walnut Maple Brown Sugar Muffins
Ingredients
- 2 cups of flour
- 1 cup of dark brown sugar
- 1 cup of buttermilk
- 1/2 cup of neutral oil
- 1 egg
- 1 tsp of vanilla extract
- 1 tsp of baking soda
- 1/2 tsp of cinnamon
- 1/4 tsp of nutmeg
- 1/4 tsp of salt
- 1/4 cup + 1 tbsp of flour
- 1/4 cup of brown sugar
- 1/4 cup of crushed walnuts
- 3 tbsp softened unsalted butter
- 1/2 tsp of cinnamon
- 1/2 cup powdered sugar
- 2 tbsp of unsalted butter, melted
- 1.5 tbsp of maple syrup
- 1.5 tbsp of milk of choice
- 1/2 tsp of cinnamon
- pinch of salt
Instructions
- Preheat oven to 350 and prep muffin tins.
- In a large bowl mix together flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- Make a well in the center of the bowl. Add buttermilk, oil, egg, and vanilla extract.
- Fold ingredients together gently until no streaks remain.
- Fill greased or lined muffin tins 2/3 of the way and top with streusel.
- Bake for 20 mins.
- Combine flour, sugar, butter, walnuts and cinnamon in a small bowl.
- Using a your hands or a fork thoroughly combine until a crumble is formed and no patches of flour remain.
- Combine sugar, butter, vanilla, maple syrup and milk in a bowl. Mix until a thin icing is formed.
- Drizzle icing on cooled muffins and enjoy.
